My humble opinion: I'd start not with technology, but with application area of interest. FPGAs are very flexible and it can be used in many applications: telco, wireless, AI, broadcast, high-performance computing and many others. Once you define your target you will get better understanding on the technology stack to learn.

Since I'm more familiar with Intel I can recommend its online FPGA courses. However there you will find a lot of non vendor-specific information that will be useful for other vendors (HDL basics for example). Xilinx also has its online training platform you may want to check out.
