Or you can design NIC in FPGA and write linux driver for your NIC.
It is good experience.

In this case you can check fpga conferences, like http://isfpga.org/program.html read the paper and choose interesting field for you.
But it's hard to do alone, so may be better find a team in your university, who already works in this area

There's fpga with hardware implemented arm cores. Xilinx names them Zynq.
Or you can use such a kind of soft-processor, when it's implemented from fpga cell (triggers, luts and so on). Xilinx offer Microblaze processor, which can me implemented in Virtex or Kintex FPGAs.

Later after fpga firmware you can run software IDE (for Xilinx it's Xilinx SDK) and run your C/C++ or even Linux OS on this processor.
